Bread Crumb Cookies
If you are looking for a recipe that's hearty, homemade and super scrumptious then this recipe is for you! What's more these cookies are made with Jacksons bread!
These biscuits are best served warm - that's if they last that long!
6 slices of Jackson's Yorkshire's Champion white bloomer.
1/2 teaspoon salt
1/2 teaspoon baking powder
170g soft butter
115g white sugar
170g brown sugar
1 teaspoon vanilla extract
225g chocolate chips
Preheat oven to 175 degrees.
Toast the bread lightly, then using a food processor blend into bread crumbs.
Mix in the flour, salt and baking powder.
In another bowl, cream together the butter and sugars, then add the egg and vanilla extract.
Add the dry mixture to the wet mixture and mix well together.
Stir in the chocolate chips.
Mould the cookies (about 1 teaspoon of mix each) onto a baking tray with baking parchment.
Bake for 10-12 minutes or until golden brown.
Perfect to enjoy with a lovely cup of Yorkshire tea!
